East met West with sharp results in the Zwilling J.A. Henckels booth during the recent International Home + Housewares Show.
Japanese chef Masaharu Morimoto hailed the cutting benefits of the Morimoto Edition of the Miyabi line from Zwilling, usually associated with European-style cutlery.
“Nice balance is very important in a knife,” said Morimoto, as he meticulously cut large slices of sashimi. “Especially if you’re a professional, doing this for 1, 2, 3 hours.”
Morimoto, perhaps best known in the U.S. through his appearances on The Food Network’s “Iron Chef,” also chopped vegetables and signed autographs.
The new Morimoto Edition, developed with input from the chef, is designed as a crossover of Japanese and Western styles.
The Morimoto Edition features three collections: Morimoto 600S, Morimoto 600 MC and Morimoto 600 Pro. Blade construction and knife styles differentiate each series. The Morimoto 600 S is for consumers who want to gain their first experience in Japanese cutlery. The Morimoto 600 MC series features handles made from Amboyna Wood from southeastern Asia. The Morimoto 600 Pro series, the premier line in the Miyabi Morimoto Edition, are constructed from CMV60 steel, plus the handles are made with Amboyna wood.
